Have you ever met a baker who can't have their cake and eat it too?
Well now you have! Introducing you to me aka Kirsten your resident baker here at Bake Couture by Kirsten.
Growing up I always loved food. I loved cooking all sorts of foods and loved eating it even more! Fast forward to when I was a young adult and working as pastry chef in Melbourne, Vic making lots of delicious cakes including lemon tarts, baked cheese cakes and tiramisu. Drool... We would eat cake for breakfast along with our coffee to wake us up for our early morning shifts after working late the night before. It wasn't a very healthy lifestyle that's for sure but we lived for the sweet taste and sugar hits. Afterall, we were pastry chefs.
It was this time when I first started suffering from random stomach cramps and I couldn't work out why. I took myself off to the GP who advised me to give up dairy to see if I noticed a difference. In just 2 weeks the stomach cramps were gone. So were my mornings of cake and coffee for breakfast. *Insert sad face.*
At first I wondered how I could continue on in this profession if I couldn't taste the creations I was making? How would I know if they were delicious tasting for the customers? Working in a large kitchen with many other chefs meant that I didn't have to go it alone so I continued on almost like before, just without cake and coffee.
By the time I opened my own business, I had enough experience baking all different recipes that I no longer felt the need to try them to make sure they were good. I was able to adjust the flavours of existing recipes I was using so that I knew they would still taste great.
Whilst I'm not allergic to all of these ingredients, I do keep them out of my diet as much as I can so my body doesn't have as many immune responses which causes all sorts of problems such as stomach cramps and skin conditions.
This is one reason why you will see me sharing recipes of baked goods and offer variations of my products that are allergen friendly in many ways as I know how hard it can be to miss out on all of the fun at birthday parties.
We all deserve to have our cake/cookie AND eat it too!
